Dinner is on Me

It's a gorgeous day here on the Lakeshore. The sun is all dappled and rosy-edged. There's just a bit of a cool snap in the air. An occasional golden leaf drifts by, swirling gently. According to the fall foliage report I saw on the news yesterday, we have achieved only 10% of our fall colour thus far. Can't wait for the rest!

In honour of it nearly being Canadian Thanksgiving (Mon. Oct 14th) and the fact that try as I might, i can't think of anything interesting to write today and yet feel compelled to add a new entry, I'm going to do something I've never done before. It's oh so risque. Are you prepared, people? I'm going to share a recipe with you.

It's deeelicious and nutritious and I serve it with white and wild rice, fresh green beans (just tender crisp so they still have that nice snap), and acorn squash. Mmmm. The perfect fall meal. Here for your dining pleasure:

Maple Almond Chicken

1/4 cup all-purpose flour

1/2 tsp dried rosemary, crushed

1/4 tsp each salt and pepper

4 boneless skinless chicken breasts

2 tbsp butter

1 cup chicken stock

8 carrots, sliced diagonally

2 tbsp maple syrup

2 tsp cider vinegar

1/3 cup sliced almonds, toasted

2 tbsp chopped fresh parsley

� In resealable plastic bag or on a plate, combine flour, rosemary, salt and pepper. Add chicken and shake or turn to coat.

Reserve any remaining flour mixture

� In large shallow Dutch oven, melt butter over medium heat; brown chicken, about 6 minutes per side. Tranfer to plate.

� Add reserved flour mixture; cook, stirring, for 1 minute. Gradually whisk in stock. Add carrots, maple syrup and vinegar;bring to boil. Reduce heat, cover and simmer for 6 minutes.

� Return chicken to pan, cook over medium heat, until no longer pink inside and almost no liquid remains, 2 to 4 minutes. Stir in almonds and parsley.

Makes 4 servings. Of course, if you only use two breasts, like I usually do, it serves two. And I usually add way more rosemary, because it is so much yummier that way.

Make it. make it tonight. I'm going to make it tomorrow.


Okay this is lame, isn't it? Posting recipes instead of REAl entries. Lame and lazy. I'm sorry. I'll do better next time. Still, it IS a good. easy flavourful meal and you SHOULD try it.
